  • 2 Ripe Avocados (medium-large), diced
  • 4 oz Feta Cheese, crumbled
  • ¼ Cup Red Onion, finely diced
  • ¼ Cup Fresh Cilantro, finely chopped (or parsley)
  • 2 Tbsp Fresh Lime Juice
  • 1 Tbsp Extra Virgin Olive Oil (for topping)
  • ¼ Tsp Sea Salt (for topping)
  • ⅛ Tsp Freshly Ground Black Pepper (for topping)
  • Fresh Dill Sprigs (for garnish, optional)
  • Lime Wedges (for garnish, optional)

Instructions

  1. Step 1
    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Pat salmon fillets dry with paper towels.
  2. Step 2
    In a small bowl, combine 2 Tbsp olive oil, 1 Tsp sea salt, ½ Tsp black pepper, 1 Tsp garlic powder, 1 Tsp smoked paprika, ½ Tsp dried dill, and optional pinch cayenne pepper to form a paste. Rub this paste generously over each salmon fillet. Arrange salmon skin-side down on the prepared baking sheet.
  3. Step 3
    Bake for 12-18 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  4. Step 4
    Remove salmon from the oven and let it rest on the baking sheet for 5 minutes to allow juices to redistribute.
  5. Step 5
    Finely dice the red onion and chop fresh cilantro. In a medium bowl, dice ripe avocados into ½-inch cubes. Add the diced red onion and chopped cilantro to the avocado. Crumble the feta cheese into the bowl.
  6. Step 6
    Pour 2 Tbsp fresh lime juice and 1 Tbsp extra virgin olive oil over the mixture. Add ¼ Tsp sea salt and ⅛ Tsp black pepper. Gently fold all ingredients together, avoiding mashing the avocado. Taste and adjust seasoning as needed.
  7. Step 7
    Transfer each rested salmon fillet to individual serving plates. Generously spoon the fresh Avocado Feta topping over each salmon fillet. Garnish with fresh dill sprigs and lime wedges if desired. Serve immediately.
