- 4 cups of fresh watermelon, cubed and seeded
- 1 cup of freshly squeezed lemon juice (about 4–6 lemons)
- 1–2 tablespoons of stevia or your preferred sugar substitute (adjust to taste)
- 4 cups of cold water
- Ice cubes
- Fresh mint leaves for garnish (optional)
- Extra lemon slices for garnish (optional)
Instructions
- Select a ripe watermelon, wash it thoroughly, and cut it in half. Scoop out the flesh, removing any seeds, and place the cubed watermelon into a blender.
- Blend the watermelon on high speed until smooth (about 30 seconds to 1 minute). Pour the puree through a fine mesh strainer or cheesecloth into a large bowl or pitcher to remove pulp, pressing to extract as much juice as possible.
- Roll the lemons on the countertop to release more juice. Cut them in half and extract the juice using a citrus juicer, ensuring no seeds fall into the juice. Measure out 1 cup of lemon juice.
- In a large pitcher, combine the strained watermelon juice and lemon juice. Add 4 cups of cold water and stir in 1 tablespoon of stevia. Taste and adjust sweetness as desired.
- Cover the pitcher and refrigerate for at least 1 hour to chill. Serve over ice cubes, garnished with fresh mint leaves and lemon slices if desired.
