  • 4 cups of fresh watermelon, cubed and seeded
  • 1 cup of freshly squeezed lemon juice (about 46 lemons)
  • 12 tablespoons of stevia or your preferred sugar substitute (adjust to taste)
  • 4 cups of cold water
  • Ice cubes
  • Fresh mint leaves for garnish (optional)
  • Extra lemon slices for garnish (optional)

Instructions

  1. Select a ripe watermelon, wash it thoroughly, and cut it in half. Scoop out the flesh, removing any seeds, and place the cubed watermelon into a blender.
  2. Blend the watermelon on high speed until smooth (about 30 seconds to 1 minute). Pour the puree through a fine mesh strainer or cheesecloth into a large bowl or pitcher to remove pulp, pressing to extract as much juice as possible.
  3. Roll the lemons on the countertop to release more juice. Cut them in half and extract the juice using a citrus juicer, ensuring no seeds fall into the juice. Measure out 1 cup of lemon juice.
  4. In a large pitcher, combine the strained watermelon juice and lemon juice. Add 4 cups of cold water and stir in 1 tablespoon of stevia. Taste and adjust sweetness as desired.
  5. Cover the pitcher and refrigerate for at least 1 hour to chill. Serve over ice cubes, garnished with fresh mint leaves and lemon slices if desired.
