- 1 tablespoon olive oil

- 1/2 red onion, thinly sliced

Instructions
- In a medium mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and olive oil.
- Mix well until all ingredients are thoroughly combined.
- Add salt and pepper to taste. Start with 1/2 teaspoon of salt and a pinch of pepper, then adjust according to your preference.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.
- If you haven’t already cooked the chicken, you can poach, grill, or bake it. For poaching, place chicken breasts in a pot, cover with water, and bring to a boil. Reduce heat and simmer for about 15-20 minutes until cooked through. Let cool, then shred or dice.
- If using pre-cooked chicken, ensure it is shredded or diced into bite-sized pieces.
- In a large mixing bowl, add the shredded or diced chicken.
- Pour the prepared tzatziki sauce over the chicken and mix until the chicken is well coated.
- Add the halved cherry tomatoes, sliced red onion, and Kalamata olives to the chicken mixture. Gently fold in the vegetables to combine.
- In a separate large bowl, place the mixed greens. Drizzle with a little olive oil and a pinch of salt, then toss to coat the greens lightly.
- To serve, place a generous portion of the mixed greens on each plate.
