Instructions

  1. In a medium mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and olive oil.
  2. Mix well until all ingredients are thoroughly combined.
  3. Add salt and pepper to taste. Start with 1/2 teaspoon of salt and a pinch of pepper, then adjust according to your preference.
  4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. If you haven’t already cooked the chicken, you can poach, grill, or bake it. For poaching, place chicken breasts in a pot, cover with water, and bring to a boil. Reduce heat and simmer for about 15-20 minutes until cooked through. Let cool, then shred or dice.
  6. If using pre-cooked chicken, ensure it is shredded or diced into bite-sized pieces.
  7. In a large mixing bowl, add the shredded or diced chicken.
  8. Pour the prepared tzatziki sauce over the chicken and mix until the chicken is well coated.
  9. Add the halved cherry tomatoes, sliced red onion, and Kalamata olives to the chicken mixture. Gently fold in the vegetables to combine.
  10. In a separate large bowl, place the mixed greens. Drizzle with a little olive oil and a pinch of salt, then toss to coat the greens lightly.
  11. To serve, place a generous portion of the mixed greens on each plate.
