  • 1/4 cup fresh lime juice (about 23 limes)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a medium-sized bowl, combine the tequila and fresh lime juice. Add the olive oil, minced garlic, chili powder, cumin, salt, black pepper, and red pepper flakes (if using). Whisk until well combined.
  2. Place the shrimp in a large resealable plastic bag or shallow dish. Pour the marinade over the shrimp, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably up to 2 hours.
  3. Preheat your grill to medium-high heat. Clean the grill grates with a grill brush and, if desired, wipe them with a paper towel dipped in oil.
  4. Remove the shrimp from the marinade, letting excess drip off. Discard the leftover marinade. Thread the shrimp onto skewers, soaking wooden skewers in water for 30 minutes beforehand to prevent burning.
  5. Place the skewers on the hot grill. Grill for 2-3 minutes on one side until pink and opaque. Flip and grill for another 2-3 minutes until fully cooked and marked.
  6. Remove the skewers from the grill and place on a serving platter. Squeeze extra lime juice over the top and garnish with chopped cilantro. Serve with lime wedges on the side.
