Ingredients
Scale
- 2 medium sweet potatoes (about 1 pound)
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 pre-made pie crust (store-bought or homemade)
- Whipped cream (for serving, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes under cold water and pat them dry.
- Prick each sweet potato several times with a fork.
- Place the sweet potatoes on a baking sheet lined with aluminum foil and bake for 45-60 minutes, or until tender.
- Remove from the oven, let cool, peel the skin, and place the flesh in a large mixing bowl.
- Mash the sweet potato flesh until smooth.
- Mix in the granulated sugar and brown sugar until fully incorporated.
- Add the softened butter and beat until melted and combined.
- Pour in the milk, add the eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt.
- Beat the mixture on medium speed until smooth and lump-free (about 2-3 minutes).
- For a store-bought crust, pre-bake according to package instructions (usually at 350°F for about 10 minutes).
- For a homemade crust, roll out the dough to fit a 9-inch pie pan, transfer it, and trim excess dough.
- Crimp the edges if desired.
- Pour the sweet potato filling into the prepared crust, spreading it evenly.
- Smooth the top with a spatula.
- Bake at 350°F (175°C) for 45-50 minutes, until the filling is set and the crust is golden.
- Check doneness with a toothpick; if it comes out clean or with a few moist crumbs, it’s ready.
- Let the pie cool on a wire rack for at least 1 hour.
- Slice into wedges and serve with whipped cream, if desired.
- Enjoy your sweet potato pie with family and friends!
