Ingredients

Scale
  • 2 medium sweet potatoes (about 1 pound)
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 pre-made pie crust (store-bought or homemade)
  • Whipped cream (for serving, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes under cold water and pat them dry.
  3. Prick each sweet potato several times with a fork.
  4. Place the sweet potatoes on a baking sheet lined with aluminum foil and bake for 45-60 minutes, or until tender.
  5. Remove from the oven, let cool, peel the skin, and place the flesh in a large mixing bowl.
  6. Mash the sweet potato flesh until smooth.
  7. Mix in the granulated sugar and brown sugar until fully incorporated.
  8. Add the softened butter and beat until melted and combined.
  9. Pour in the milk, add the eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt.
  10. Beat the mixture on medium speed until smooth and lump-free (about 2-3 minutes).
  11. For a store-bought crust, pre-bake according to package instructions (usually at 350°F for about 10 minutes).
  12. For a homemade crust, roll out the dough to fit a 9-inch pie pan, transfer it, and trim excess dough.
  13. Crimp the edges if desired.
  14. Pour the sweet potato filling into the prepared crust, spreading it evenly.
  15. Smooth the top with a spatula.
  16. Bake at 350°F (175°C) for 45-50 minutes, until the filling is set and the crust is golden.
  17. Check doneness with a toothpick; if it comes out clean or with a few moist crumbs, it’s ready.
  18. Let the pie cool on a wire rack for at least 1 hour.
  19. Slice into wedges and serve with whipped cream, if desired.
  20. Enjoy your sweet potato pie with family and friends!
