  • 2 large eggs
  • 1 1/4 cups milk
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking
  • Fresh fruits (strawberries, bananas, blueberries, etc.)
  • Nutella or chocolate spread
  • Whipped cream
  • Powdered sugar for dusting
  • Maple syrup or honey (optional)

Instructions

  1. In a large mixing bowl, sift 1 cup of all-purpose flour. Add 2 large eggs and whisk until combined.
  2. Slowly pour in 1 1/4 cups of milk while whisking to create a smooth batter.
  3. Add 2 tablespoons of granulated sugar and 1/4 teaspoon of salt, followed by 1 teaspoon of vanilla extract and 2 tablespoons of melted unsalted butter. Whisk until smooth.
  4. Let the batter rest for about 30 minutes if possible.
  5. Heat a non-stick skillet over medium heat and coat with butter or oil.
  6. Pour about 1/4 cup of batter into the center of the pan, tilting to spread evenly.
  7. Cook for 1-2 minutes until edges lift and bottom is golden. Flip and cook for another minute.
  8. Transfer to a plate and cover with a towel to keep warm. Repeat with remaining batter.
  9. To assemble, spread Nutella on one half of each crepe, add fresh fruits, fold, and drizzle with syrup. Dust with powdered sugar before serving.

Notes

  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • Feel free to experiment with different fillings such as cream cheese, peanut butter, or yogurt.
