- 1 cup fresh strawberries, hulled and diced
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- Extra strawberries for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray or butter to prevent sticking.
- In a medium bowl, combine the diced strawberries with 1 tablespoon of granulated sugar. Toss to coat the strawberries and set aside.
- In a large mixing bowl, whisk together the flour, remaining granulated sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the melted butter, buttermilk, eggs, vanilla extract, and almond extract (if using). Whisk until smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined; a few lumps are okay.
- Gently fold in the prepared strawberries.
- Using a piping bag or a zip-top bag with the corner snipped off, fill each cavity of the donut pan about 2/3 full with the batter.
- Tap the pan gently on the counter to remove air bubbles.
- Bake for 10-12 minutes, or until lightly golden and a toothpick comes out clean.
- Allow the donuts to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar and milk until smooth. Adjust consistency as desired.
- Dip the top of each cooled donut into the glaze, allowing excess to drip off. Optionally, sprinkle with diced strawberries or sprinkles.
- Place the glazed donuts back on the wire rack to set for 10-15 minutes.
- Serve warm or at room temperature, garnished with fresh strawberries or mint leaves.
