Enjoy these fluffy strawberry cake donuts, filled with fresh strawberry goodness and topped with a sweet glaze. Ideal for breakfast or a delightful snack!

Ingredients

Scale
  • 1 cup fresh strawberries, hulled and diced
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • Extra strawberries for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray or butter to prevent sticking.
  2. In a medium bowl, combine the diced strawberries with 1 tablespoon of granulated sugar. Toss to coat the strawberries and set aside.
  3. In a large mixing bowl, whisk together the flour, remaining granulated sugar, baking powder, baking soda, and salt until well combined.
  4. In another bowl, mix the melted butter, buttermilk, eggs, vanilla extract, and almond extract (if using). Whisk until smooth.
  5. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; a few lumps are okay.
  6. Gently fold in the prepared strawberries.
  7. Using a piping bag or a zip-top bag with the corner snipped off, fill each cavity of the donut pan about 2/3 full with the batter.
  8. Tap the pan gently on the counter to remove air bubbles.
  9. Bake for 10-12 minutes, or until lightly golden and a toothpick comes out clean.
  10. Allow the donuts to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
  11. For the glaze, whisk together the powdered sugar and milk until smooth. Adjust consistency as desired.
  12. Dip the top of each cooled donut into the glaze, allowing excess to drip off. Optionally, sprinkle with diced strawberries or sprinkles.
  13. Place the glazed donuts back on the wire rack to set for 10-15 minutes.
  14. Serve warm or at room temperature, garnished with fresh strawberries or mint leaves.

Notes

  • Ensure the donuts are completely cooled before glazing to prevent the glaze from melting.
  • Feel free to customize the glaze with flavors like vanilla or a pinch of salt for added depth.
