With a buttery base and a burst of sweetness from the sprinkles, they are perfect for celebrations or simply to brighten your day. Enjoy them fresh from the oven or store for later indulgence!

Ingredients

Scale
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup rainbow sprinkles (plus extra for topping)
  • 1 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
  4. Add the eggs one at a time, mixing well after each addition. Then, pour in the vanilla extract and mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  6. Fold in the rainbow sprinkles and white chocolate chips (if using) with a spatula until evenly distributed.
  7. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  8. Line two baking sheets with parchment paper.
  9. Scoop out portions of the dough and roll them into balls (about 1.5 inches in diameter).
  10. Place the cookie dough balls on the prepared baking sheets, leaving about 2 inches of space between each.
  11. Sprinkle additional rainbow sprinkles on top of each cookie dough ball.
  12. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
  13. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
  14. Store completely cooled cookies in an airtight container at room temperature for up to a week.
  15. For longer storage, freeze cookies in a single layer on a baking sheet until solid, then transfer to a freezer-safe bag for up to three months.
  16. Serve these cookies at birthday parties, holiday gatherings, or as a sweet treat for family and friends.
  17. Drizzle melted chocolate over cooled cookies or serve with a scoop of ice cream for an extra special dessert.
  18. Ensure your butter is softened but not melted for the right cookie texture.
