Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
- Add the eggs one at a time, mixing well after each addition. Then, pour in the vanilla extract and mix until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
- Fold in the rainbow sprinkles and white chocolate chips (if using) with a spatula until evenly distributed.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
- Line two baking sheets with parchment paper.
- Scoop out portions of the dough and roll them into balls (about 1.5 inches in diameter).
- Place the cookie dough balls on the prepared baking sheets, leaving about 2 inches of space between each.
- Sprinkle additional rainbow sprinkles on top of each cookie dough ball.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
- Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
- Store completely cooled cookies in an airtight container at room temperature for up to a week.
