Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large mixing bowl, cream together the softened butter and white sugar until light and fluffy (about 3-5 minutes).
  4. Beat in the egg, vanilla extract, and almond extract (if using) until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  6. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
  7. Line a baking sheet with parchment paper or a silicone baking mat.
  8. Scoop out about 1 tablespoon of dough, roll it into a ball, and then roll in granulated sugar until fully coated.
  9. Arrange the sugar-coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 8-10 minutes, or until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
  12. In a small bowl, combine 3/4 cup powdered sugar with 1-2 tablespoons of milk and a splash of vanilla extract. Mix until smooth.
