- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 1/2 teaspoon salt
- 3 cups old-fashioned rolled oats
- 1 cup raisins
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a hand mixer or stand mixer on medium speed until light and fluffy (about 2-3 minutes).
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
- Fold in the rolled oats, raisins, and nuts (if using) with a spatula or wooden spoon until evenly distributed. The dough will be thick and slightly sticky.
- (Optional) Chill the dough for at least 30 minutes in the fridge to enhance flavor and texture.
- Line a baking sheet with parchment paper. Drop rounded balls of dough onto the sheet, leaving about 2 inches of space between each cookie. Flatten them slightly for even baking.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers look slightly underbaked.
- Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
