Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the rigatoni pasta and cook according to package instructions until al dente (about 10-12 minutes).
  3. Drain the pasta, reserving 1 cup of pasta water, and set aside.
  4. In a large saucepan, melt the butter over medium heat.
  5. Whisk in the flour and cook for about 2 minutes, stirring constantly to form a roux.
  6. Gradually pour in the whole milk while whisking to prevent lumps. Continue whisking until the mixture thickens (about 5-7 minutes).
  7. Reduce heat to low and add the cheddar, gouda, and Parmesan cheese. Stir until melted and creamy.
  8. Add garlic powder, onion powder, smoked paprika, and season with salt and pepper to taste.
  9. Add the drained rigatoni to the cheese sauce and stir gently to coat.
  10. If the sauce is too thick, add reserved pasta water until desired consistency is reached.
  11. Preheat the oven to 350°F (175°C).
  12. In a small bowl, mix panko breadcrumbs with olive oil until coated.
  13. Optionally, add garlic powder or smoked paprika for extra flavor.
  14. Pour the mac and cheese mixture into a large baking dish and spread evenly.
  15. Sprinkle the panko mixture over the top, ensuring even coverage.
  16. Optionally, add more grated Parmesan on top of the breadcrumbs.
