  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme

  • 2 tablespoons olive oil

Instructions

  1. Rinse the chicken breasts under cold water and pat them dry with paper towels.
  2. In a large bowl, season the chicken breasts with salt, pepper, garlic powder, onion powder, and dried thyme, ensuring an even coating.
  3. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
  4. In a separate bowl, combine the stuffing mix and chicken broth, stirring until evenly moistened. Add more broth if a moister stuffing is desired.
  5. Mix in the cream of chicken soup until well combined, then fold in the frozen mixed vegetables.
  6. Place the seared chicken breasts at the bottom of the slow cooker, spreading them out evenly.
  7. Pour the stuffing mixture over the chicken, spreading it out evenly.
  8. Cover the slow cooker and set it to low heat for 4-6 hours, or high heat for 2-3 hours.
  9. Check halfway through cooking; if the stuffing appears dry, add a splash of chicken broth.
  10. Ensure the chicken reaches an internal temperature of 165°F (75°C) before removing it from the slow cooker.
  11. Fluff the stuffing with a fork to aerate it.
  12. Serve each chicken breast with a generous amount of stuffing alongside. Garnish with chopped fresh parsley if desired.
