Instructions

  1. Fill a large pot with water and bring it to a rolling boil. Add a generous amount of salt to the water.
  2. Add the bucatini pasta to the boiling water and cook according to package instructions (about 9-11 minutes) until al dente, stirring occasionally.
  3. Before draining, reserve about 1 cup of the pasta cooking water.
  4. Drain the pasta in a colander and set aside without rinsing.
  5. While the pasta cooks, season the shrimp with salt, pepper, and Italian seasoning. Add red pepper flakes if desired.
  6. In a large skillet, heat olive oil over medium-high heat until hot.
  7. Add the shrimp in a single layer and cook for 2-3 minutes until pink and opaque. Flip and cook for another 1-2 minutes. Avoid overcooking.
  8. Stir in the minced garlic and sauté for about 30 seconds until fragrant.
  9. Pour in the heavy cream and bring to a gentle simmer, stirring to combine.
  10. Gradually add the grated Parmesan cheese, stirring until melted and the sauce thickens. Adjust consistency with reserved pasta water if needed.
  11. Taste and adjust seasoning with salt, pepper, or more Italian seasoning as desired.
  12. Add the drained bucatini to the skillet with the shrimp and sauce.
  13. Gently toss the pasta in the sauce, adding reserved pasta water if the sauce is too thick.
  14. Taste and adjust seasoning or add more cream/cheese for a creamier texture.
  15. Twirl a portion of the shrimp Alfredo bucatini onto each plate.
  16. Sprinkle with chopped parsley and additional Parmesan if desired.
  17. Serve immediately while hot and creamy, paired with a side salad or garlic bread.
