Ingredients
Scale
- 12 ounces bucatini pasta
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1/2 teaspoon red pepper flakes (optional, for heat)
Instructions
- Fill a large pot with water and bring it to a rolling boil. Add a generous amount of salt to the water.
- Add the bucatini pasta to the boiling water and cook according to package instructions (about 9-11 minutes) until al dente, stirring occasionally.
- Before draining, reserve about 1 cup of the pasta cooking water.
- Drain the pasta in a colander and set aside without rinsing.
- While the pasta cooks, season the shrimp with salt, pepper, and Italian seasoning. Add red pepper flakes if desired.
- In a large skillet, heat olive oil over medium-high heat until hot.
- Add the shrimp in a single layer and cook for 2-3 minutes until pink and opaque. Flip and cook for another 1-2 minutes. Avoid overcooking.
- Stir in the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and bring to a gentle simmer, stirring to combine.
- Gradually add the grated Parmesan cheese, stirring until melted and the sauce thickens. Adjust consistency with reserved pasta water if needed.
- Taste and adjust seasoning with salt, pepper, or more Italian seasoning as desired.
- Add the drained bucatini to the skillet with the shrimp and sauce.
- Gently toss the pasta in the sauce, adding reserved pasta water if the sauce is too thick.
- Taste and adjust seasoning or add more cream/cheese for a creamier texture.
- Twirl a portion of the shrimp Alfredo bucatini onto each plate.
- Sprinkle with chopped parsley and additional Parmesan if desired.
- Serve immediately while hot and creamy, paired with a side salad or garlic bread.
Notes
- Shrimp Selection: Opt for wild-caught shrimp for better flavor.
- Pasta Cooking: Always cook pasta al dente, as it will continue to cook slightly when mixed with the sauce.
