- Fresh parsley or green onions for garnish (optional)
Instructions

- Mince the garlic finely.
- Slice the red bell pepper into thin strips.
- In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
- Add the sliced sausage and cook for 5-7 minutes, stirring occasionally, until browned and slightly crispy.
- Add the sliced onion and sauté for 3-4 minutes until translucent and soft.
- Stir in the minced garlic and sliced red bell pepper, cooking for an additional 2-3 minutes until the bell pepper softens.
- Add the chopped cabbage, stirring to combine with the sausage and vegetables.
- Season with soy sauce, apple cider vinegar, smoked paprika, black pepper, salt, and red pepper flakes (if using).
- Stir-fry for 5-7 minutes until the cabbage is tender but still slightly crunchy. Adjust seasoning if necessary.
- Remove from heat and garnish with freshly chopped parsley or sliced green onions if desired.
- Serve hot on its own or over rice or noodles. This dish pairs well with steamed rice, quinoa, or cauliflower rice.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave.
