Instructions

  1. In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 5 minutes, or until the onion becomes translucent and soft.
  2. Add the minced garlic and grated ginger to the pot. Stir continuously for about 1 minute until fragrant, being careful not to let the garlic burn.
  3. Next, add the diced red bell pepper to the pot. Cook for an additional 3-4 minutes, stirring occasionally, until the bell pepper softens.
  4. Stir in the red curry paste, ensuring it coats the vegetables evenly. Cook for about 2 minutes, allowing the flavors to meld.
  5. Pour in the coconut milk and broth, stirring well to combine all the ingredients. Bring the mixture to a gentle simmer.
  6. Add the soy sauce, fish sauce, lime juice, sugar, and chili flakes. Stir to incorporate all the flavors. Taste the broth and adjust seasoning with salt and pepper as needed.
  7. Once the soup is simmering, add the shrimp to the pot. Cook for about 3-5 minutes, or until the shrimp turn pink and opaque. Be careful not to overcook the shrimp, as they can become tough.
  8. After the shrimp are cooked, remove the pot from heat. Let the soup sit for a couple of minutes to allow the flavors to develop further.
