- 2 tablespoons of oyster sauce
- 1 tablespoon of sesame oil
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear (about 2-3 minutes).
- In a medium saucepan, combine the rinsed rice with 4 cups of water and a pinch of salt. Bring to a boil over medium-high heat.
- Once boiling, reduce heat to low, cover, and let simmer for 15-20 minutes until the rice is tender and water is absorbed.
- Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and set aside.
- Season chicken pieces with salt, pepper, and a splash of soy sauce in a large bowl.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add chicken in a single layer and cook for 5-7 minutes until golden brown and cooked through. Remove and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Sauté minced garlic and ginger for 30 seconds until fragrant.
- Add diced red bell pepper and cook for 3-4 minutes until softened.
- Stir in frozen peas and diced pineapple, cooking for an additional 2-3 minutes.
- Return the cooked chicken to the skillet and stir to combine.
- Pour in soy sauce, oyster sauce, and sesame oil. Mix well and cook for another 2-3 minutes.
- Gently fold in the cooked jasmine rice in batches, ensuring even distribution.
- Taste and adjust seasoning with more soy sauce or salt and pepper if needed.
- Remove from heat and stir in chopped green onions.
- Garnish with fresh cilantro if desired.
- Serve hot in bowls or on plates, paired with steamed vegetables or a salad.
