Description

Enjoy a warm and comforting peach cobbler made with sweet peaches and a buttery, cinnamon-spiced batter. This easy dessert is perfect for any gathering and pairs wonderfully with vanilla ice cream or whipped cream.

Ingredients

Scale
  • 2 cans (15 oz each) sliced peaches in syrup
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Open the two cans of sliced peaches and drain the syrup into a medium-sized mixing bowl (reserve syrup for later if desired).
  3. In the bowl with the drained peaches, add 1 cup of granulated sugar, 1 teaspoon of ground cinnamon, and 1 tablespoon of lemon juice.
  4. Gently stir until the peaches are well coated. Set aside.
  5. In a large mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Whisk together.
  6. In a separate bowl, mix 1 cup of milk, 1/2 cup of melted unsalted butter, and 1 teaspoon of vanilla extract (add nutmeg if using).
  7. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  8. Grease a 9×13-inch baking dish with butter or non-stick spray.
  9. Pour the batter into the dish, spreading it evenly.
  10. Spoon the peach mixture over the batter, distributing evenly. Pour reserved syrup over the top if desired.
  11. Gently press the peaches down into the batter with a spatula.
  12. Bake in the preheated oven for 40-45 minutes, until the top is golden brown and a toothpick inserted comes out clean.
  13. Rotate the baking dish halfway through for even cooking.
  14. Let cool for 10-15 minutes before serving.
  15. Scoop portions into bowls and top with vanilla ice cream or whipped cream.
  16. Store leftovers in an airtight container in the refrigerator for 3-4 days; reheat in the microwave.
  17. Enjoy with friends and family!

Notes

  • For added flavor, mix in blueberries or raspberries with the peaches.
  • For a rustic look, sprinkle oats or chopped nuts on top before baking.
