- 2 cans (15 oz each) sliced peaches in syrup
- 1 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Open the two cans of sliced peaches and drain the syrup into a medium-sized mixing bowl (reserve syrup for later if desired).
- In the bowl with the drained peaches, add 1 cup of granulated sugar, 1 teaspoon of ground cinnamon, and 1 tablespoon of lemon juice.
- Gently stir until the peaches are well coated. Set aside.
- In a large mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Whisk together.
- In a separate bowl, mix 1 cup of milk, 1/2 cup of melted unsalted butter, and 1 teaspoon of vanilla extract (add nutmeg if using).
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Grease a 9×13-inch baking dish with butter or non-stick spray.
- Pour the batter into the dish, spreading it evenly.
- Spoon the peach mixture over the batter, distributing evenly. Pour reserved syrup over the top if desired.
- Gently press the peaches down into the batter with a spatula.
- Bake in the preheated oven for 40-45 minutes, until the top is golden brown and a toothpick inserted comes out clean.
- Rotate the baking dish halfway through for even cooking.
- Let cool for 10-15 minutes before serving.
- Scoop portions into bowls and top with vanilla ice cream or whipped cream.
- Store leftovers in an airtight container in the refrigerator for 3-4 days; reheat in the microwave.
