  • 4 medium sweet potatoes (about 2 pounds), peeled and cubed
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup pecans, chopped
  • 1/2 cup mini marshmallows (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the peeled and cubed sweet potatoes in a large pot and cover with water by about an inch.
  3. Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to medium and simmer for 15-20 minutes, or until fork-tender.
  4. Drain the sweet potatoes in a colander and let cool for a few minutes.
  5. In a large mixing bowl, mash the drained sweet potatoes until smooth and creamy.
  6. Add the softened butter, brown sugar, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix until well combined.
  7. Crack the two large eggs into the mixture and stir until fully incorporated.
  8. In a separate bowl, combine the chopped pecans with a tablespoon of melted butter and a tablespoon of brown sugar.
  9. Mix until the pecans are well coated and set aside.
  10. Grease a 9×13-inch baking dish with butter or cooking spray.
  11. Pour the sweet potato mixture into the prepared baking dish and spread it out evenly.
  12. Sprinkle the pecan topping over the sweet potato mixture. If using, add mini marshmallows on top.
  13. Bake in the preheated oven for 25-30 minutes, until the top is golden brown and the edges are bubbly.
  14. If the pecans brown too quickly, cover loosely with aluminum foil.
  15. Remove from the oven and let cool for about 10 minutes before serving.
