Description
Delicious lasagna roll-ups filled with a creamy ricotta mixture, topped with marinara sauce and melted mozzarella. Perfect for family dinners or meal prep!

- 12 lasagna noodles
- 2 cups ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups marinara sauce (store-bought or homemade)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally to prevent sticking.
- Drain the noodles in a colander and rinse under cold water. Lay them flat on a clean kitchen towel or parchment paper to cool and dry slightly.
- In a large mixing bowl, combine ricotta cheese, egg, 1 cup of mozzarella cheese, ½ cup of Parmesan cheese, dried oregano, dried basil, salt, and pepper. Mix until creamy and smooth.
- Taste the filling and adjust seasoning if necessary.
- Preheat the oven to 375°F (190°C). Spread 1 cup of marinara sauce evenly on the bottom of a 9×13 inch baking dish.
- Lay one lasagna noodle flat. Spoon 2-3 tablespoons of cheese filling onto the noodle, spreading it evenly. Avoid overfilling.
- Roll the noodle away from you, keeping the filling inside. Place seam-side down in the baking dish. Repeat with remaining noodles and filling.
- Pour remaining marinara sauce over the roll-ups and sprinkle with remaining mozzarella and Parmesan cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, until cheese is bubbly and golden brown.
- Insert a knife into the center; if it comes out hot, the dish is ready.
- Allow the roll-ups to sit for about 10 minutes before serving.
- Garnish with fresh basil if desired. Serve with a side salad or garlic bread.
