Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally to prevent sticking.
  2. Drain the noodles in a colander and rinse under cold water. Lay them flat on a clean kitchen towel or parchment paper to cool and dry slightly.
  3. In a large mixing bowl, combine ricotta cheese, egg, 1 cup of mozzarella cheese, ½ cup of Parmesan cheese, dried oregano, dried basil, salt, and pepper. Mix until creamy and smooth.
  4. Taste the filling and adjust seasoning if necessary.
  5. Preheat the oven to 375°F (190°C). Spread 1 cup of marinara sauce evenly on the bottom of a 9×13 inch baking dish.
  6. Lay one lasagna noodle flat. Spoon 2-3 tablespoons of cheese filling onto the noodle, spreading it evenly. Avoid overfilling.
  7. Roll the noodle away from you, keeping the filling inside. Place seam-side down in the baking dish. Repeat with remaining noodles and filling.
  8. Pour remaining marinara sauce over the roll-ups and sprinkle with remaining mozzarella and Parmesan cheese.
  9. Cover the baking dish with aluminum foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 15-20 minutes, until cheese is bubbly and golden brown.
  11. Insert a knife into the center; if it comes out hot, the dish is ready.
  12. Allow the roll-ups to sit for about 10 minutes before serving.
  13. Garnish with fresh basil if desired. Serve with a side salad or garlic bread.
