  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raisins (optional)
  • 1/4 cup chopped nuts (such as almonds or pecans, optional)
  • Ground nutmeg for garnish (optional)

Instructions

  1. Measure out all the ingredients accurately to ensure the right consistency and flavor.
  2. Rinse the Arborio rice under cold water in a fine-mesh strainer until the water runs clear to remove excess starch.
  3. If using raisins, soak them in warm water for about 10 minutes to plump them up. Drain and set aside.
  4. Chop any nuts you plan to use into small pieces for even distribution.
  5. Plug in your Instant Pot and select the “Sauté” function. Allow it to heat up for a couple of minutes.
  6. Add the rinsed Arborio rice to the pot and toast it lightly for about 2-3 minutes, stirring frequently.
  7. Once toasted, add the milk, water, sugar, vanilla extract, cinnamon, and salt. Stir well to combine.
  8. Close the lid and ensure the valve is set to “Sealing.” Select “Manual” or “Pressure Cook” and set the timer for 10 minutes on high pressure.
  9. After cooking, allow the Instant Pot to naturally release pressure for 10 minutes, then carefully switch the valve to “Venting.”
  10. Open the lid and stir the rice pudding, which will be liquidy but will thicken as it cools.
  11. If using raisins, fold them into the pudding. For a creamier texture, stir in an additional splash of milk or cream.
  12. Adjust flavor with more cinnamon or a pinch of nutmeg to taste.
  13. Fold in chopped nuts, reserving some for garnish if desired.
  14. Let the pudding sit for 5-10 minutes to thicken further. Serve warm or chilled.
  15. Ladle the pudding into bowls or dessert cups.
  16. Garnish with ground nutmeg or additional cinnamon.
  17. Optionally, add whipped cream or vanilla ice cream for an indulgent treat.
