  • 2 tablespoons olive oil

  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 cup Dijon mustard
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Start by removing the pork chops from the refrigerator and allowing them to come to room temperature for about 30 minutes.
  2. Preheat your oven to 400°F (200°C).
  3. Pat the pork chops dry with paper towels.
  4. In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, thyme, rosemary, oregano, and paprika.
  5. Rub the seasoning blend evenly over both sides of each pork chop.
  6. In a separate bowl, combine the breadcrumbs and grated Parmesan cheese.
  7. In another small bowl, add the Dijon mustard.
  8. Spread a thin layer of Dijon mustard over the top side of each seasoned pork chop.
  9. Press the breadcrumb and cheese mixture onto the mustard-coated side of each pork chop.
  10. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  11. Carefully place the pork chops in the skillet, crust side down, and sear for about 3-4 minutes until golden brown.
  12. Flip the pork chops over and sear the other side for an additional 2-3 minutes.
  13. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
  14. Remove the skillet from the oven and let the pork chops rest for about 5 minutes.
  15. Prepare any side dishes you wish to serve with the pork chops.
  16. Place each pork chop on a serving plate and garnish with freshly chopped parsley.
  17. Serve warm and enjoy!

  • For extra flavor, consider marinating the pork chops in a mixture of olive oil, garlic, and herbs for a few hours or overnight before cooking.
