Ingredients
Scale
- 2 lbs of chicken breasts (boneless and skinless)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- Fresh herbs for garnish (optional)
Instructions
- In a medium-sized bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, and paprika.
- Whisk the ingredients together until they are well blended. The olive oil should emulsify with the lemon juice, creating a smooth marinade.
- Taste the marinade and adjust the seasoning if necessary. You can add more salt or lemon juice according to your preference.
- Place the chicken breasts in a large resealable plastic bag or a shallow dish.
- Pour the marinade over the chicken, ensuring that each piece is well coated.
- Seal the bag or cover the dish with plastic wrap.
- Refrigerate the chicken for at least 30 minutes, but for best results, marinate for 2 to 4 hours.
- While the chicken is marinating, prepare your grill. If youre using a charcoal grill, light the charcoal and let it burn until its covered with white ash (about 20-30 minutes).
- If youre using a gas grill, preheat it to medium-high heat (about 400°F to 450°F).
- Once the grill is hot, clean the grates with a grill brush to remove any residue.
- Remove the chicken from the marinade and let any excess marinade drip off. Discard the leftover marinade.
- Place the chicken breasts on the grill, leaving space between each piece.
- Close the grill lid and cook the chicken for about 6-7 minutes on one side.
- After 6-7 minutes, flip the chicken breasts using tongs. Cook for an additional 6-7 minutes on the other side until the internal temperature reaches 165°F.
- Optionally, brush the chicken with some additional marinade during the last few minutes of grilling.
- Once cooked, remove the chicken from the grill and place it on a cutting board or plate.
- Cover loosely with aluminum foil and let it rest for about 5-10 minutes.
- After resting, slice the chicken against the grain or serve whole.
- Garnish with fresh herbs if desired.
- Serve with your favorite sides, such as grilled vegetables, a fresh salad, or rice.
Notes
- Always preheat your grill for even cooking.
- Use a meat thermometer to check for doneness.
- Avoid pressing down on the chicken while grilling to retain juices.
- Feel free to experiment with different marinades and seasonings.
