  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • Fresh herbs for garnish (optional)

Instructions

  1. In a medium-sized bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, and paprika.
  2. Whisk the ingredients together until they are well blended. The olive oil should emulsify with the lemon juice, creating a smooth marinade.
  3. Taste the marinade and adjust the seasoning if necessary. You can add more salt or lemon juice according to your preference.
  4. Place the chicken breasts in a large resealable plastic bag or a shallow dish.
  5. Pour the marinade over the chicken, ensuring that each piece is well coated.
  6. Seal the bag or cover the dish with plastic wrap.
  7. Refrigerate the chicken for at least 30 minutes, but for best results, marinate for 2 to 4 hours.
  8. While the chicken is marinating, prepare your grill. If you’re using a charcoal grill, light the charcoal and let it burn until it’s covered with white ash (about 20-30 minutes).
  9. If you’re using a gas grill, preheat it to medium-high heat (about 400°F to 450°F).
  10. Once the grill is hot, clean the grates with a grill brush to remove any residue.
  11. Remove the chicken from the marinade and let any excess marinade drip off. Discard the leftover marinade.
  12. Place the chicken breasts on the grill, leaving space between each piece.
  13. Close the grill lid and cook the chicken for about 6-7 minutes on one side.
  14. After 6-7 minutes, flip the chicken breasts using tongs. Cook for an additional 6-7 minutes on the other side until the internal temperature reaches 165°F.
  15. Optionally, brush the chicken with some additional marinade during the last few minutes of grilling.
  16. Once cooked, remove the chicken from the grill and place it on a cutting board or plate.
  17. Cover loosely with aluminum foil and let it rest for about 5-10 minutes.
  18. After resting, slice the chicken against the grain or serve whole.
  19. Garnish with fresh herbs if desired.
