Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 ripe mango, peeled and diced
- 1 cup fresh pineapple, diced
- 1/4 cup fresh lime juice
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for heat)
- Fresh cilantro, for garnish
Instructions
- In a medium-sized bowl, combine lime juice, honey, soy sauce, olive oil, minced garlic, ground ginger, salt, black pepper, and red pepper flakes (if using). Whisk until well blended.
- Reserve half of the marinade in a separate bowl for basting later.
- Place chicken breasts in a resealable plastic bag or shallow dish. Pour the remaining marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish.
- Refrigerate for at least 1 hour, preferably 4 hours or overnight for enhanced flavor.
- In a medium bowl, combine diced mango and pineapple.
- Add chopped cilantro and a squeeze of lime juice for freshness. Mix gently and set aside in the refrigerator to chill.
- Preheat grill to medium-high heat (about 10-15 minutes).
- Remove chicken from marinade, letting excess drip off. Discard used marinade.
- Grill chicken for 6-7 minutes on one side without moving.
- Flip chicken, brush with reserved marinade, and grill for another 6-7 minutes, or until internal temperature reaches 165°F (75°C).
- Remove chicken from grill and let it rest for 5 minutes.
- Slice chicken into strips or serve whole.
- Arrange grilled chicken on a platter and top with mango and pineapple salsa.
- Garnish with additional cilantro and lime wedges.
Notes
- Marinating the chicken longer enhances the flavor and tenderness.
