  • 12 oz pasta (spaghetti or your choice)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or maple syrup
  • 1/2 cup heavy cream
  • 1/2 cup vodka
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to package instructions until al dente (8-10 minutes). Stir occasionally.
  3. Before draining, reserve about 1 cup of the pasta cooking water.
  4. Drain the pasta and set aside without rinsing.
  5. In a large skillet, heat olive oil over medium heat. Sauté the onion for 3-4 minutes until translucent, then add garlic and cook for 1-2 minutes.
  6. Stir in crushed tomatoes and let simmer for 5 minutes.
  7. Add gochujang and mix well.
  8. Stir in soy sauce and honey (or maple syrup) and simmer for another 2-3 minutes.
  9. Pour in vodka and let simmer for 5 minutes.
  10. Lower heat and stir in heavy cream. Simmer for another 2-3 minutes, adding reserved pasta water if needed.
  11. Adjust seasoning with salt and pepper.
  12. Add drained pasta to the skillet and toss to coat.
  13. Cook together for an additional minute over low heat.
  14. Serve in bowls or on plates.
  15. Top with fresh basil or parsley and optional Parmesan cheese.
  16. Serve and enjoy the delightful flavors!
