Instructions

  1. In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use a hand mixer or a whisk to blend the ingredients until smooth and creamy. Ensure there are no lumps for a velvety texture.
  2. Gently fold in the sliced strawberries, ensuring they are evenly distributed throughout the cream cheese mixture. Set aside.
  3. Lay out the 8 slices of bread on a clean surface. For thicker filling, use fewer slices.
  4. Spread a generous amount of the cheesecake filling on 4 of the bread slices, leaving a small border around the edges.
  5. Top each filled slice with another slice of bread to create a sandwich. Press down gently to seal the edges, and crimp with a fork if desired.
  6. In a shallow dish, add the all-purpose flour. In a second dish, crack the eggs and whisk until well beaten. In a third dish, combine the breadcrumbs, cinnamon (if using), and salt.
  7. Set up your breading station in the order of flour, egg wash, and breadcrumbs.
  8. Coat each sandwich in flour, shaking off excess.
  9. Dip the floured sandwich into the egg wash, allowing excess to drip off.
