Description

Fluffy cottage cheese cloud bread is a light and airy alternative to traditional bread, perfect for sandwiches or as a snack. Made with simple ingredients, it’s easy to whip up and customize with your favorite flavors.

Ingredients

Scale
  • 1 cup cottage cheese (preferably full-fat for creaminess)
  • 3 large eggs
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon garlic powder (optional, for flavor)
  • 1/2 teaspoon onion powder (optional, for flavor)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper (optional)
  • 1 tablespoon fresh herbs (like chives or parsley, optional)
  • Cooking spray or parchment paper for baking

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large mixing bowl, add 1 cup of cottage cheese. Blend if desired for a smoother texture.
  3. Crack 3 large eggs, separating the yolks from the whites. Keep the whites in a separate bowl.
  4. Add 1/4 teaspoon of cream of tartar to the egg whites.
  5. Mix the cottage cheese and egg yolks until well combined. Add garlic powder, onion powder, salt, and black pepper if using.
  6. Fold in chopped fresh herbs if desired.
  7. Whip the egg whites with cream of tartar until soft peaks form (3-5 minutes).
  8. Gently fold the whipped egg whites into the cottage cheese mixture until just combined.
  9. Line a baking sheet with parchment paper or grease it with cooking spray.
  10. Scoop the batter onto the baking sheet, forming 4-6 mounds about 1/2 inch thick.
  11. Smooth the tops with a spatula.
  12. Bake for 25-30 minutes until golden brown and firm to the touch.
  13. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a dairy-free version, substitute cottage cheese with a plant-based alternative.
