Instructions

  1. Gather all your ingredients and lay them out on the counter for easy access.
  2. Measure 1 cup of frozen pineapple chunks. If using fresh pineapple, add a handful of ice cubes later.
  3. Peel and slice the banana into smaller pieces for easier blending.
  4. If using canned coconut milk, shake it well before opening. Measure out 1 cup if using carton coconut milk.
  5. If desired, measure 1 tablespoon of maple syrup for added sweetness.
  6. Add the frozen pineapple chunks to the blender, followed by the sliced banana and coconut milk. If using, add the maple syrup and vanilla extract.
  7. Blend on low speed, gradually increasing to high, for about 30-60 seconds until smooth. Adjust the consistency with more coconut milk if too thick.
  8. Check the consistency and taste. If you prefer a thicker smoothie, add ice cubes and blend again. For sweetness, add more maple syrup if desired.
  9. Prepare tall glasses for serving. Pour the smoothie into the glasses, using a spatula to scrape out any remaining smoothie from the blender.
  10. Garnish with shredded coconut, fresh pineapple slices, and mint leaves for an extra touch.
  11. Serve immediately and enjoy your refreshing smoothie!
