  • 3 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • 1/4 cup olive oil (for frying)
  • Lemon wedges (for serving)

Instructions

  1. Wash the zucchinis thoroughly under cold water and scrub gently. Trim off the ends and grate using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  2. In a large mixing bowl, combine the grated zucchini with 1 teaspoon of salt and let it sit for 10 minutes. Squeeze out any accumulated liquid. Add flour, Parmesan cheese, breadcrumbs, eggs, minced garlic, black pepper, red pepper flakes (if using), and parsley. Mix until well combined.
  3. Heat a large skillet over medium heat and add 1/4 cup of olive oil. Once hot, drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly. Cook for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes. Transfer to a plate lined with paper towels to absorb excess oil.
  4. Arrange the fritters on a serving platter and serve warm with lemon wedges on the side. Optionally, serve with a dipping sauce like garlic aioli or a yogurt-based dip.
