- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional, for serving)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the russet potatoes under cold water and scrub gently. Pat dry, then cut each potato in half lengthwise and into 3-4 wedges.
- Soak the wedges in a bowl of cold water for at least 30 minutes to remove excess starch.
- Drain the wedges and pat them dry thoroughly with a kitchen towel.
- In a small bowl, mix garlic powder, onion powder, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper.
- In a large bowl, toss the dried potato wedges with olive oil and the seasoning mix until evenly coated.
- Line a baking sheet with parchment paper or grease it lightly.
- Spread the seasoned wedges in a single layer on the baking sheet, ensuring they are not overcrowded.
- Bake for 25-30 minutes, flipping halfway through for even cooking.
- Wedges should be golden brown and crispy. Bake for an additional 5-10 minutes if needed.
- Let cool for a couple of minutes, then garnish with parsley and optional Parmesan cheese.
- Serve with your favorite dipping sauces like ketchup, ranch, or spicy aioli.
Notes
- For extra crispiness, ensure the wedges are thoroughly dried after soaking.
