  • 1 cup cooked vermicelli noodles

  • 1/2 cup fresh mint leaves
  • 1/2 cup cooked shrimp, sliced (optional)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Cooking spray or oil for air frying

Instructions

  1. In a large mixing bowl, combine the cooked vermicelli noodles, shredded carrots, shredded cabbage, bean sprouts, cilantro, and mint leaves.
  2. If using shrimp, add the sliced shrimp to the bowl.
  3. Drizzle the soy sauce, sesame oil, and lime juice over the mixture. Season with salt and pepper to taste.
  4. Toss all the ingredients together until well combined. Set aside to allow the flavors to meld while you prepare the rice paper wrappers.
  5. Fill a shallow dish or a large plate with warm water. The water should be warm enough to soften the rice paper but not boiling.
  6. Take one rice paper wrapper and dip it into the warm water for about 10-15 seconds, or until it becomes pliable. Be careful not to soak it too long, as it can become too soft and tear easily.
  7. Once softened, lay the rice paper wrapper flat on a clean, dry surface or a cutting board.
  8. Place about 2-3 tablespoons of the filling mixture in the center of the rice paper wrapper, leaving about 2 inches of space on the sides.
  9. Fold the sides of the rice paper over the filling, then roll the wrapper away from you, tucking it tightly as you go. Make sure the filling is secure inside the roll.
  10. Repeat the process with the remaining rice paper wrappers and filling mixture. You should be able to make about 10 rolls.
  11. Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  12. While the air fryer is preheating, place the assembled rice paper rolls on a clean plate or cutting board.
  13. Lightly spray or brush the rolls with cooking spray or oil. This will help them achieve a crispy texture during cooking.
  14. Once the air fryer is preheated, carefully place the rice paper rolls in the air fryer basket. Make sure they are not overcrowded; you may need to cook them in batches depending on the size of your air fryer.
  15. Air fry the rolls at 375°F (190°C) for 8-10 minutes, or until they are golden brown and crispy. Flip the rolls halfway through the cooking time to ensure even crispiness.
  16. Once cooked, remove the rolls from the air fryer and place them on a serving platter. Allow them to cool slightly before serving.
