- 4 boneless, skinless chicken breasts

- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup fresh spinach, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh basil, chopped (optional, for garnish)
- 1 tablespoon balsamic vinegar (optional, for added flavor)
Instructions
- Start by preparing the chicken breasts. Pat them dry with paper towels to remove excess moisture.
- Season both sides of the chicken breasts generously with salt, pepper, garlic powder, onion powder, and Italian seasoning.
- In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts to the skillet and sear for about 5-7 minutes on each side, or until golden brown and cooked through.
- Once cooked, remove the chicken from the skillet and set it aside on a plate. Cover it with aluminum foil to keep it warm.
- In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 30 seconds, or until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes, stirring occasionally, until they start to soften.
- Pour in the heavy cream, stirring to combine with the tomatoes and garlic. Allow the mixture to simmer for about 2-3 minutes.
- Gradually add the grated Parmesan cheese to the skillet, stirring continuously until fully melted and creamy. Adjust consistency with chicken broth or water if needed.
- Stir in the chopped spinach and cook for an additional 2 minutes, or until wilted.
- If desired, add balsamic vinegar for extra flavor and stir well to combine.
- Return the seared chicken breasts to the skillet, nestling them into the creamy sauce. Spoon some sauce over the chicken.
- Allow the chicken to simmer in the sauce for an additional 2-3 minutes.
- Once everything is heated through, remove the skillet from the heat. Garnish with freshly chopped basil if desired.
