  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped (optional, for garnish)
  • 1 tablespoon balsamic vinegar (optional, for added flavor)

Instructions

  1. Start by preparing the chicken breasts. Pat them dry with paper towels to remove excess moisture.
  2. Season both sides of the chicken breasts generously with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts to the skillet and sear for about 5-7 minutes on each side, or until golden brown and cooked through.
  4. Once cooked, remove the chicken from the skillet and set it aside on a plate. Cover it with aluminum foil to keep it warm.
  5. In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 30 seconds, or until fragrant.
  6. Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes, stirring occasionally, until they start to soften.
  7. Pour in the heavy cream, stirring to combine with the tomatoes and garlic. Allow the mixture to simmer for about 2-3 minutes.
  8. Gradually add the grated Parmesan cheese to the skillet, stirring continuously until fully melted and creamy. Adjust consistency with chicken broth or water if needed.
  9. Stir in the chopped spinach and cook for an additional 2 minutes, or until wilted.
  10. If desired, add balsamic vinegar for extra flavor and stir well to combine.
  11. Return the seared chicken breasts to the skillet, nestling them into the creamy sauce. Spoon some sauce over the chicken.
  12. Allow the chicken to simmer in the sauce for an additional 2-3 minutes.
  13. Once everything is heated through, remove the skillet from the heat. Garnish with freshly chopped basil if desired.
