  • 2 ripe mangoes, peeled and diced
  • 1 cup heavy whipping cream
  • 1/2 cup sweetened condensed milk
  • 1/4 cup plain yogurt
  • 1 tablespoon fresh lime juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin powder
  • 3 tablespoons cold water
  • Fresh mint leaves for garnish (optional)
  • Mango slices for garnish (optional)

Instructions

  1. Select ripe mangoes that are slightly soft to the touch and have a sweet aroma.
  2. Peel the mangoes and dice the flesh into small pieces.
  3. Blend the diced mangoes until smooth to create about 1 to 1.5 cups of mango puree.
  4. Transfer the mango puree to a bowl and set aside. Straining is optional.
  5. Sprinkle gelatin powder over cold water in a small bowl and let it sit for 5 minutes to bloom.
  6. Gently heat the bloomed gelatin until dissolved, either in the microwave or using a double boiler. Do not boil.
  7. Let the gelatin cool slightly before adding it to the mousse mixture.
  8. In a large bowl, beat the heavy whipping cream until soft peaks form (3-5 minutes).
  9. In another bowl, whisk together sweetened condensed milk, yogurt, lime juice, and vanilla extract until smooth.
  10. Add the cooled gelatin to the yogurt mixture and stir well.
  11. Gently fold the whipped cream into the yogurt and gelatin mixture until combined.
  12. Fold the mango puree into the whipped cream and yogurt mixture until fully incorporated.
  13. Ensure the mixture is uniform in color and texture.
  14. Transfer the mousse mixture into serving dishes, leaving space at the top for garnishing.
  15. Cover with plastic wrap or a lid and refrigerate for at least 4 hours or overnight.
  16. Once set, remove the mousse from the refrigerator and serve in individual bowls or plates.
  17. Garnish with fresh mint leaves and mango slices if desired.
