- 2 ripe mangoes, peeled and diced
- 1 cup heavy whipping cream
- 1/2 cup sweetened condensed milk
- 1/4 cup plain yogurt
- 1 tablespoon fresh lime juice
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin powder
- 3 tablespoons cold water
- Fresh mint leaves for garnish (optional)
- Mango slices for garnish (optional)
Instructions
- Select ripe mangoes that are slightly soft to the touch and have a sweet aroma.
- Peel the mangoes and dice the flesh into small pieces.
- Blend the diced mangoes until smooth to create about 1 to 1.5 cups of mango puree.
- Transfer the mango puree to a bowl and set aside. Straining is optional.
- Sprinkle gelatin powder over cold water in a small bowl and let it sit for 5 minutes to bloom.
- Gently heat the bloomed gelatin until dissolved, either in the microwave or using a double boiler. Do not boil.
- Let the gelatin cool slightly before adding it to the mousse mixture.
- In a large bowl, beat the heavy whipping cream until soft peaks form (3-5 minutes).
- In another bowl, whisk together sweetened condensed milk, yogurt, lime juice, and vanilla extract until smooth.
- Add the cooled gelatin to the yogurt mixture and stir well.
- Gently fold the whipped cream into the yogurt and gelatin mixture until combined.
- Fold the mango puree into the whipped cream and yogurt mixture until fully incorporated.
- Ensure the mixture is uniform in color and texture.
- Transfer the mousse mixture into serving dishes, leaving space at the top for garnishing.
- Cover with plastic wrap or a lid and refrigerate for at least 4 hours or overnight.
- Once set, remove the mousse from the refrigerator and serve in individual bowls or plates.
- Garnish with fresh mint leaves and mango slices if desired.
