Instructions

  1. In a large pot, pour in the 4 cups of chicken broth and bring it to a gentle simmer over medium heat. Add the 2 cups of cooked, shredded chicken and let it simmer for about 10 minutes to meld the flavors.
  2. In a large mixing bowl, combine the 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Whisk until well combined. Pour in the 1/4 cup of melted unsalted butter and 1/2 cup of milk, stirring until a soft dough forms. Avoid overmixing; a few lumps are okay.
  3. After the chicken has simmered for 10 minutes, drop heaping tablespoons of the dumpling batter into the simmering broth (aim for about 8-10 dumplings). Cover the pot with a lid and let them cook for about 15 minutes without lifting the lid.
  4. After 15 minutes, carefully remove the lid and check the dumplings for doneness. They should be soft and springy. Stir the broth gently, adjusting the seasoning if necessary. Serve the chicken and dumplings in bowls, garnished with fresh parsley if desired.
