Ingredients

Scale
  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup spinach, chopped (fresh or frozen)
  • 1/2 cup bell pepper, diced (any color)
  • 1/2 cup onion, finely chopped
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1 tablespoon olive oil or cooking spray (for greasing the muffin tin)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cottage cheese and eggs. Whisk until smooth and creamy.
  3. Add the chopped spinach, diced bell pepper, and finely chopped onion. Stir to combine.
  4. Mix in the shredded cheese until evenly distributed.
  5. Season with garlic powder, onion powder, salt, black pepper, and paprika (if using). Mix well.
  6. Grease each muffin cup in a standard muffin tin with olive oil or cooking spray.
  7. Alternatively, use silicone muffin cups for easy removal.
  8. Pour the batter into each muffin cup, filling them about 3/4 full.
  9. Ensure an even distribution of ingredients among the cups.
  10. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until set and lightly golden.
  11. Check for doneness with a toothpick; it should come out clean or with a few crumbs.
  12. Allow the muffins to cool in the tin for about 5 minutes.
  13. Use a butter knife to loosen the edges of each muffin from the tin.
  14. Carefully remove the muffins and place them on a wire rack to cool completely.
  15. Store in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
  16. Serve warm or cold as a breakfast, snack, or light lunch.
  17. Pair with fresh fruit or a simple green salad for a complete meal.
  18. Top with avocado slices, salsa, or Greek yogurt for added flavor.
