- Salt and pepper to taste
- Cooking spray or olive oil for greasing

Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cottage cheese and eggs. Whisk until smooth.
- Add the shredded cheese and mix well.
- Incorporate the diced vegetables of your choice.
- Season with garlic powder, onion powder, salt, and pepper. Adjust to taste.
- Mix all ingredients until evenly distributed.
- Choose a muffin tin or silicone mold for baking.
- Lightly grease the muffin tin or mold with cooking spray or olive oil.
- Pour the egg mixture into each muffin cup or mold, filling about 3/4 full.
- Optionally, sprinkle additional shredded cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until set and lightly golden.
- Check for doneness with a toothpick; it should come out clean.
- Allow to cool for a few minutes before removing from the molds.
- Transfer the egg bites to a serving platter.
- Garnish with fresh herbs if desired.
- Serve warm or at room temperature, optionally with salsa, avocado, or Greek yogurt.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
