  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning (if using).
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts.
  3. Cook for 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F (75°C).
  4. Remove the chicken from the skillet and let it rest for 5 minutes before slicing into thin strips.
  5. In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions (8-10 minutes) until al dente.
  6. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.
  7. In the same skillet, add sliced mushrooms and sauté over medium heat for about 5 minutes until tender.
  8. Add minced garlic and cook for an additional 1-2 minutes, stirring frequently.
  9. Pour in heavy cream, stirring to combine, and let it simmer for 3-4 minutes until slightly thickened.
  10. Gradually add grated Parmesan cheese, stirring until melted and smooth. Adjust consistency with reserved pasta water if needed.
  11. Season with additional salt and pepper to taste.
  12. Add cooked fettuccine to the skillet with the sauce and toss to coat.
  13. Add sliced chicken on top and toss until well combined and heated through.
  14. If the dish is too dry, add more reserved pasta water until desired creaminess is achieved.
  15. Remove from heat and serve immediately, garnished with chopped parsley.
  16. Optionally, sprinkle additional Parmesan cheese on top before serving.
