Description

Enjoy a delicious Chicken Madeira with tender chicken breasts in a rich mushroom sauce, topped with melted mozzarella cheese. This dish is perfect for impressing guests or enjoying a cozy family dinner.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, sliced
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Dredge each chicken breast in flour, ensuring an even coating. Shake off excess flour and set aside.
  3. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
  4. Add the floured chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  5. In the same skillet, add the remaining tablespoon of butter. Once melted, add sliced mushrooms and sauté for about 5 minutes until browned and tender.
  6. Add minced garlic and cook for an additional minute, stirring frequently.
  7. Pour in Madeira wine, scraping the bottom of the skillet to deglaze. Simmer for 3-4 minutes.
  8. Add chicken broth and soy sauce, stirring in fresh thyme. Let the sauce simmer for 5-7 minutes until slightly thickened.
  9. Return the cooked chicken to the skillet, spooning some mushroom sauce over it.
  10. Preheat the oven to 375°F (190°C). If the skillet is oven-safe, transfer it directly; otherwise, move chicken and sauce to a baking dish.
  11. Sprinkle shredded mozzarella cheese over the chicken and sauce.
  12. Bake in the preheated oven for 15-20 minutes until cheese is melted and bubbly.
  13. Remove from the oven and let sit for a few minutes before serving.
  14. Plate the chicken breasts and spoon additional mushroom sauce over the top. Garnish with chopped parsley.
  15. Serve with mashed potatoes, rice, or a fresh green salad.

Notes

  • For added sweetness, consider adding a tablespoon of brown sugar or honey to the sauce.
  • For a spicy kick, sprinkle red pepper flakes into the sauce while it simmers.
  • Substitute mozzarella with provolone or Parmesan for a different flavor.
  • Add spinach or kale during the last few minutes of simmering for extra nutrition.
