Ingredients
Scale
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 ounces cremini mushrooms, sliced
- 1 cup Madeira wine
- 1 cup chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon garlic, minced
- 1 teaspoon fresh thyme leaves
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Dredge each chicken breast in flour, ensuring an even coating. Shake off excess flour and set aside.
- In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
- Add the floured chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add the remaining tablespoon of butter. Once melted, add sliced mushrooms and sauté for about 5 minutes until browned and tender.
- Add minced garlic and cook for an additional minute, stirring frequently.
- Pour in Madeira wine, scraping the bottom of the skillet to deglaze. Simmer for 3-4 minutes.
- Add chicken broth and soy sauce, stirring in fresh thyme. Let the sauce simmer for 5-7 minutes until slightly thickened.
- Return the cooked chicken to the skillet, spooning some mushroom sauce over it.
- Preheat the oven to 375°F (190°C). If the skillet is oven-safe, transfer it directly; otherwise, move chicken and sauce to a baking dish.
- Sprinkle shredded mozzarella cheese over the chicken and sauce.
- Bake in the preheated oven for 15-20 minutes until cheese is melted and bubbly.
- Remove from the oven and let sit for a few minutes before serving.
- Plate the chicken breasts and spoon additional mushroom sauce over the top. Garnish with chopped parsley.
- Serve with mashed potatoes, rice, or a fresh green salad.
Notes
- For added sweetness, consider adding a tablespoon of brown sugar or honey to the sauce.
- For a spicy kick, sprinkle red pepper flakes into the sauce while it simmers.
- Substitute mozzarella with provolone or Parmesan for a different flavor.
- Add spinach or kale during the last few minutes of simmering for extra nutrition.
