- 4 cloves garlic, minced

- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
- 4 hoagie rolls or baguette-style bread
- 1 cup fresh spinach or arugula (optional)
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
Instructions
- Rinse the shrimp under cold water and pat dry with paper towels.
- In a large mixing bowl, combine shrimp with salt, pepper, paprika, and red pepper flakes. Toss to coat and let marinate for 10-15 minutes.
- In a large skillet, melt 2 tablespoons of unsalted butter over medium heat until foamy.
- Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add marinated shrimp to the skillet and cook for 2-3 minutes on one side until pink and opaque.
- Flip shrimp and cook for an additional 2-3 minutes until fully cooked.
- Remove from heat and stir in the remaining 2 tablespoons of butter until melted. Add mozzarella and Parmesan cheese, stirring until melted and combined.
- In a small bowl, mix mayonnaise, lemon juice, and Dijon mustard until smooth.
- Season with salt and pepper to taste, adjusting lemon juice for tanginess if desired.
- Preheat oven to 350°F (175°C) if toasting sandwiches.
- Slice hoagie rolls lengthwise to create a pocket.
- Spread mayonnaise mixture inside each roll.
- If using, add fresh spinach or arugula to each roll.
- Fill each roll with the cheesy garlic shrimp mixture.
- Place assembled sandwiches on a baking sheet lined with parchment paper.
- Optionally, sprinkle extra mozzarella cheese on top.
- Bake for 10-12 minutes until bread is toasted and cheese is bubbly and golden.
- Remove from oven and let cool for a minute.
- Sprinkle chopped parsley over each sandwich.
- Cut sandwiches in half for easier handling and serve immediately while hot and cheesy.
