  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 4 hoagie rolls or baguette-style bread
  • 1 cup fresh spinach or arugula (optional)
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a large mixing bowl, combine shrimp with salt, pepper, paprika, and red pepper flakes. Toss to coat and let marinate for 10-15 minutes.
  3. In a large skillet, melt 2 tablespoons of unsalted butter over medium heat until foamy.
  4. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  5. Add marinated shrimp to the skillet and cook for 2-3 minutes on one side until pink and opaque.
  6. Flip shrimp and cook for an additional 2-3 minutes until fully cooked.
  7. Remove from heat and stir in the remaining 2 tablespoons of butter until melted. Add mozzarella and Parmesan cheese, stirring until melted and combined.
  8. In a small bowl, mix mayonnaise, lemon juice, and Dijon mustard until smooth.
  9. Season with salt and pepper to taste, adjusting lemon juice for tanginess if desired.
  10. Preheat oven to 350°F (175°C) if toasting sandwiches.
  11. Slice hoagie rolls lengthwise to create a pocket.
  12. Spread mayonnaise mixture inside each roll.
  13. If using, add fresh spinach or arugula to each roll.
  14. Fill each roll with the cheesy garlic shrimp mixture.
  15. Place assembled sandwiches on a baking sheet lined with parchment paper.
