- 1 cup unsalted butter
- 2 cups packed brown sugar
- 1 cup granulated sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups pecans, chopped
- 3 cups powdered sugar
- 1 cup semi-sweet chocolate chips
- 1/2 cup white chocolate chips (optional)
- 1/4 cup chopped pecans for topping (optional)
Instructions
- In a medium-sized saucepan, melt the unsalted butter over medium heat. Stir occasionally to ensure it doesnt burn.
- Once the butter is melted, add the packed brown sugar and granulated sugar to the saucepan. Stir continuously until the sugars are fully dissolved and the mixture is smooth.
- Gradually pour in the heavy cream while stirring. Continue to cook the mixture over medium heat, bringing it to a gentle boil. Make sure to stir constantly to prevent the mixture from sticking to the bottom of the pan.
- Once the mixture reaches a boil, reduce the heat to low and let it simmer for about 5 minutes. This will help to thicken the fudge base.
- Remove the saucepan from the heat and stir in the vanilla extract and salt. Mix well to combine all the ingredients.
- Add the chopped pecans to the fudge mixture. Stir until the pecans are evenly distributed throughout the fudge base.
- Allow the fudge mixture to cool for about 10 minutes at room temperature. This will make it easier to handle when you add the powdered sugar.
- Once the fudge mixture has cooled slightly, gradually add the powdered sugar, one cup at a time. Use a wooden spoon or a spatula to mix it in thoroughly. The mixture will become thick and sticky.
- Continue to mix until all the powdered sugar is fully incorporated and the fudge is smooth. If the mixture is too thick, you can add a splash of heavy cream to help loosen it up.
- Prepare a 9×13 inch baking dish by lining it with parchment paper, leaving some overhang on the sides for easy removal later.
- Transfer the fudge mixture into the prepared baking dish. Use a spatula to spread it evenly across the dish, smoothing the top as you go.
- If desired, sprinkle the additional chopped pecans on top of the fudge for added texture and decoration.
- Cover the baking dish with plastic wrap or aluminum foil and refrigerate for at least 2 hours, or until the fudge is firm and set.
- While the fudge is setting, prepare the chocolate topping. In a microwave-safe bowl, combine the semi-sweet chocolate chips and white chocolate chips (if using).
- Microwave the chocolate in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth. Be careful not to overheat the chocolate, as it can seize up.
- Once melted, remove the bowl from the microwave and let it cool slightly before using it to top the fudge.
- After the fudge has set, remove it from the refrigerator. Use the parchment paper overhang to lift the fudge out of the baking dish.
- Place the fudge on a cutting board and cut it into squares or rectangles, depending on your preference.
- Drizzle the melted chocolate over the cut fudge pieces. You can use a spoon or a piping bag for more control over the chocolate drizzle.
- If desired, sprinkle additional chopped pecans on top of the chocolate drizzle for added crunch and visual appeal.
- Once the chocolate has set, you can store the fudge treats in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
