Instructions

  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly with cooking spray.
  2. In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the granulated sugar and melted butter. Stir until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until smooth.
  5. In a separate bowl, sift together the cocoa powder, flour, salt, and baking powder. Gradually add to the wet mixture, stirring gently until just combined. Avoid overmixing.
