Ingredients
Scale
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup creamy peanut butter
- 1/2 cup chocolate chips (optional)
- 1/4 cup chopped peanuts (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly with cooking spray.
- In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the granulated sugar and melted butter. Stir until well combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until smooth.
- In a separate bowl, sift together the cocoa powder, flour, salt, and baking powder. Gradually add to the wet mixture, stirring gently until just combined. Avoid overmixing.
- If using, fold in the chocolate chips.
- In a small microwave-safe bowl, soften the peanut butter in the microwave for 15-20 seconds. Stir until smooth.
- Fill each muffin cup halfway with brownie batter. Add a dollop of peanut butter on top and swirl with a toothpick.
- Fill the cups to the top with remaining brownie batter, ensuring the peanut butter is visible.
- Bake for 12-15 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
