These Breakfast Cows in a Blanket are a fun and tasty brunch option, featuring flaky crescent roll dough wrapped around savory breakfast sausages and melted cheddar cheese. Easy to prepare and perfect for sharing, they make a delightful addition to any breakfast or brunch table.

Ingredients

Scale
  • 1 package of crescent roll dough (8 oz)
  • 8 breakfast sausages (links or patties)
  • 1 cup shredded cheddar cheese
  • 1 large egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Optional: chopped chives or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Open the package of crescent roll dough and unroll it on a clean, flat surface.
  3. Cut each triangle in half lengthwise using a pizza cutter or sharp knife.
  4. If using links, leave them whole; if using patties, cut each in half.
  5. Cook the sausages in a skillet over medium heat until browned and cooked through (about 5-7 minutes).
  6. Remove from skillet and let cool slightly.
  7. Take a smaller triangle of crescent dough and place a sausage at the wide end.
  8. Sprinkle shredded cheddar cheese on top of the sausage.
  9. Roll the dough over the sausage and cheese, tucking the point underneath.
  10. Repeat for all sausages until you have about 16 wrapped sausages.
  11. In a small bowl, whisk together the egg and milk until smooth.
  12. Brush the egg wash over each wrapped sausage using a pastry brush.
  13. Sprinkle garlic powder, onion powder, black pepper, and salt over each wrapped sausage.
  14. Add crushed red pepper flakes for extra heat, if desired.
  15. Line a baking sheet with parchment paper or a silicone mat.
  16. Place each wrapped sausage on the baking sheet, leaving space between them.
  17. Bake for 12-15 minutes, or until golden brown and cooked through.
  18. Remove from the oven and let cool slightly before serving.
  19. Garnish with chopped chives or parsley, if desired.

Notes

  • These can be made ahead of time and frozen before baking. Just bake them straight from the freezer, adding a few extra minutes to the baking time.
  • Feel free to customize the cheese or add other ingredients like jalapeños or cooked bacon for extra flavor.
