These breakfast burritos are a hearty blend of protein-rich black beans, fluffy scrambled eggs, and colorful vegetables, all wrapped in a warm tortilla. Topped with creamy avocado and melted cheese, they offer a delicious and nutritious way to kickstart your day!

- 1 can (15 oz) black beans, drained and rinsed
- 4 large eggs
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup diced bell pepper (any color)
- 1/4 cup diced onion
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 4 large flour tortillas (10-inch size)
- 1 avocado, sliced
- Fresh cilantro, chopped (for garnish)
- Hot sauce (optional, for serving)
Instructions
- In a medium-sized skillet, heat a splash of olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 3-4 minutes until softened and the onion is translucent.
- Add the black beans to the skillet, stirring them in with the sautéed vegetables. Cook for another 2-3 minutes to warm the beans through.
- Sprinkle in the ground cumin, chili powder, salt, and pepper. Stir and cook for an additional minute to allow the spices to meld. Remove from heat and set aside.
- In a separate bowl, crack the eggs and whisk until fully combined, adding a pinch of salt and pepper.
- Return the skillet to medium heat, adding more olive oil or butter if needed. Pour in the whisked eggs and let cook undisturbed for about 1 minute.
- Gently stir with a spatula, pushing the eggs from the edges toward the center. Cook until just set but still slightly soft, about 3-4 minutes. Remove from heat.
- Fold the cooked black bean mixture into the eggs and sprinkle the shredded cheese on top, allowing it to melt slightly.
- Lay a large flour tortilla flat on a clean surface. Spoon about 1/4 of the egg and black bean mixture onto the center.
- Add a few slices of avocado on top of the filling.
- Fold the sides of the tortilla inward, then roll it up tightly from the bottom, tucking in the sides as you go. Repeat with remaining tortillas and filling.
- Wipe out the skillet and return it to medium heat, adding more oil or butter if desired.
- Place the burritos seam-side down in the skillet and cook for about 2-3 minutes until the bottom is golden brown and crispy.
- Carefully flip the burritos and cook for another 2-3 minutes until the other side is golden brown.
Notes
- Feel free to customize the filling with additional ingredients like spinach, mushrooms, or different types of cheese.
- Serve with fresh cilantro and hot sauce for an extra kick!
