  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon mirin (sweet rice wine)
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger

Instructions

  1. In a medium bowl, combine the soy sauce, brown sugar, rice vinegar, mirin, minced garlic, and minced ginger. Whisk until the sugar is dissolved.
  2. In a separate small bowl, mix the cornstarch with water until smooth. Add this mixture to the soy sauce mixture and stir well to combine.
  3. Transfer the sauce mixture to a small saucepan and bring it to a simmer over medium heat. Stir continuously until the sauce thickens, about 3-5 minutes. Remove from heat and set aside.
  4. Slice the beef sirloin against the grain into thin strips, about 1/4 inch thick. This will help ensure tenderness.
  5. In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
  6. Add the sliced beef to the skillet in a single layer. Allow it to sear without stirring for about 2 minutes, then stir-fry for an additional 2-3 minutes until the beef is browned and cooked through. Remove the beef from the skillet and set aside.
  7. In the same skillet, add the broccoli florets, sliced red bell pepper, and snap peas. Stir-fry the vegetables for about 4-5 minutes until they are tender-crisp.
  8. Return the cooked beef to the skillet with the vegetables.
  9. Pour the prepared teriyaki sauce over the beef and vegetables. Stir well to coat everything evenly with the sauce.
  10. Continue to cook for an additional 2-3 minutes, allowing the sauce to heat through and thicken slightly, coating the beef and vegetables.
  11. Once everything is well combined and heated through, remove the skillet from the heat.
  12. Serve the beef teriyaki over a bed of steamed rice or noodles, if desired.
