A quick and delicious Beef Teriyaki stir-fry featuring tender beef sirloin, vibrant vegetables, and a homemade teriyaki sauce. Perfect for a weeknight dinner!

- 1 pound beef sirloin, thinly sliced against the grain
- 1 tablespoon vegetable oil
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup snap peas
- 2 green onions, chopped
- 1 tablespoon sesame seeds (optional, for garnish)
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon mirin (sweet rice wine)
- 1 tablespoon cornstarch
- 1/4 cup water
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
Instructions
- In a medium bowl, combine the soy sauce, brown sugar, rice vinegar, mirin, minced garlic, and minced ginger. Whisk until the sugar is dissolved.
- In a separate small bowl, mix the cornstarch with water until smooth. Add this mixture to the soy sauce mixture and stir well to combine.
- Transfer the sauce mixture to a small saucepan and bring it to a simmer over medium heat. Stir continuously until the sauce thickens, about 3-5 minutes. Remove from heat and set aside.
- Slice the beef sirloin against the grain into thin strips, about 1/4 inch thick. This will help ensure tenderness.
- In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
- Add the sliced beef to the skillet in a single layer. Allow it to sear without stirring for about 2 minutes, then stir-fry for an additional 2-3 minutes until the beef is browned and cooked through. Remove the beef from the skillet and set aside.
- In the same skillet, add the broccoli florets, sliced red bell pepper, and snap peas. Stir-fry the vegetables for about 4-5 minutes until they are tender-crisp.
- Return the cooked beef to the skillet with the vegetables.
- Pour the prepared teriyaki sauce over the beef and vegetables. Stir well to coat everything evenly with the sauce.
- Continue to cook for an additional 2-3 minutes, allowing the sauce to heat through and thicken slightly, coating the beef and vegetables.
- Once everything is well combined and heated through, remove the skillet from the heat.
- Serve the beef teriyaki over a bed of steamed rice or noodles, if desired.
- Garnish with chopped green onions and sesame seeds for added flavor and presentation.
