Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the russet potatoes thoroughly under cold running water to remove any dirt.
  3. Pat the potatoes dry with a clean kitchen towel or paper towels.
  4. Slice each potato into 1/4-inch thick rounds.
  5. Place the potato slices in a large mixing bowl.
  6. Drizzle the olive oil over the potato slices and toss gently to coat.
  7. In a small bowl, combine garlic powder, onion powder, smoked paprika, dried oregano, salt, and pepper. Mix well.
  8. Sprinkle the seasoning mixture over the oiled potato slices and toss again to coat evenly.
  9. Line a large baking sheet with parchment paper or grease it lightly.
  10. Arrange the seasoned potato slices in a single layer on the baking sheet, ensuring they do not overlap.
  11. Bake for 20 minutes.
  12. Flip each potato slice using a spatula and return to the oven for an additional 15-20 minutes, or until golden brown and crispy.
  13. Remove the baking sheet from the oven and sprinkle shredded cheese over the hot potato slices.
  14. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  15. Let cool for a few minutes and garnish with chopped fresh parsley.
  16. Transfer the baked potato slices to a serving platter or individual plates.
