Instructions
- Preheat your oven to 425°F (220°C).
- Wash the russet potatoes thoroughly under cold running water to remove any dirt.
- Pat the potatoes dry with a clean kitchen towel or paper towels.
- Slice each potato into 1/4-inch thick rounds.
- Place the potato slices in a large mixing bowl.
- Drizzle the olive oil over the potato slices and toss gently to coat.
- In a small bowl, combine garlic powder, onion powder, smoked paprika, dried oregano, salt, and pepper. Mix well.
- Sprinkle the seasoning mixture over the oiled potato slices and toss again to coat evenly.
- Line a large baking sheet with parchment paper or grease it lightly.
- Arrange the seasoned potato slices in a single layer on the baking sheet, ensuring they do not overlap.
- Bake for 20 minutes.
- Flip each potato slice using a spatula and return to the oven for an additional 15-20 minutes, or until golden brown and crispy.
- Remove the baking sheet from the oven and sprinkle shredded cheese over the hot potato slices.
- Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes and garnish with chopped fresh parsley.
- Transfer the baked potato slices to a serving platter or individual plates.
- Serve warm with sour cream or Greek yogurt for dipping.
- Allow leftovers to cool completely before storing in an airtight container in the refrigerator for up to 3 days.
- To reheat, preheat your oven to 375°F (190°C) and heat the potato slices for about 10-15 minutes.
