  • 1/4 teaspoon baking soda

  • 1/2 cup eggnog
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons eggnog (for glaze)
  • Extra ground nutmeg or cinnamon (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a donut pan with cooking spray or butter.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, nutmeg, and cinnamon.
  4. In another bowl, whisk together eggnog, egg, melted butter, and vanilla extract.
  5. Pour wet ingredients into dry ingredients and gently fold until just combined.
  6. Fill each cavity of the donut pan about 2/3 full with batter.
  7. Bake for 10-12 minutes, or until lightly golden and a toothpick comes out clean.
  8. Let the donuts cool in the pan for 5 minutes, then invert onto a wire rack to cool completely.
  9. In a small bowl, whisk powdered sugar and 1 tablespoon of eggnog until smooth. Adjust consistency with more eggnog if needed.
  10. Dip the top of each cooled donut into the glaze, allowing excess to drip off.
  11. Sprinkle with extra nutmeg or cinnamon.
  12. Best enjoyed fresh, but can be stored in an airtight container for up to 2 days.
