  • 4 slices of whole-grain bread
  • 8 ounces of ground turkey
  • 4 large eggs

  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • Fresh cilantro or parsley for garnish (optional)
  • Red pepper flakes (optional, for added heat)

Instructions

  1. In a medium-sized skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the ground turkey to the skillet, breaking it apart with a spatula.
  3. Sprinkle in the garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well to combine.
  4. Cook the turkey for about 7-10 minutes, stirring occasionally, until it is fully cooked and no longer pink. Ensure it reaches an internal temperature of 165°F (75°C).
  5. Once cooked, remove the skillet from heat and set aside.
  6. While the turkey is cooking, cut the ripe avocados in half and remove the pit.
  7. Using a spoon, scoop the avocado flesh into a mixing bowl.
  8. Add 1 tablespoon of fresh lemon juice to the bowl to prevent browning and enhance flavor.
  9. Using a fork, mash the avocado until it reaches your desired level of creaminess. You can leave it chunky or make it smooth, depending on your preference.
  10. Season the mashed avocado with salt and pepper to taste. Mix well and set aside.
  11. In a separate non-stick skillet, heat a small amount of oil or butter over medium heat.
  12. Crack the eggs into the skillet, being careful not to break the yolks. You can cook them sunny-side up, over-easy, or scrambled, depending on your preference.
  13. Cook the eggs for about 3-5 minutes, or until the whites are set and the yolks are cooked to your liking. If you prefer your yolks runny, aim for sunny-side up or over-easy.
